I would like to record video in at least 1028 resolution for recordings as long as 30 minutes to an SD card. What camera and board hardware would be best?

You can also use a Raspberry pi and Raspberry pi camera. Raspberry pi camera offers 1080P video.

raspberry pi is good to go but also you can do an internet search to find such solutions. You will find too many commercially available cameras with such ability

With Raspberry pi camera, you can easily capture video.The v2 Camera Module has a Sony IMX219 8-megapixel sensor.The Camera Module 2 can be used to take high-definition video.
