I have a few eagle schematics that I would like to take a little bit from each and combine them into a new schematic. Is it possible to copy and paste between schematic files, or am I stuck creating a brand new file, then recreating the circuits from each file?

Try using the group select tool to select the parts you want to copy, then use the scissors button on the toolbar. Open the new file and do a paste, it should copy the info.

Edit: Just tried it. I forgot to say you need to either right-click the group or hit the GO button after clicking the cut button. It wants to know what it is you wish to "cut", which is really more like the "copy" command in most apps, but whatever.
