Questions relating to designing PCBs

Hi

I design a complex component.

Is it possible to split the "package" in more items. In the "symbol" design I have 80 pins. Now I want to connect them to 4 headers with 20 pin each. In the "Device" editor I cant select anything there have fewer pins than my designed component in "symbol"....

I there any way to do this?

You can split up the symbol into as many pieces as you want. For example, you may want to have a separate piece for the power pins and another for each port of a microprocessor. It does not make sense for the package to be split up. The package defines how the part looks on the PCB. The package must be identical to the manufacturer's pad drawing.
If you want to connect a 80-pin part to 4 headers, then your schematic should show that. You will have 5 parts - the 80-pin chip and 4 headers. Connect the part's pins to the appropriate header pins. Run traces on the board to connect the headers and the chip. Don't forget any power bypass caps, crystal, etc.
