I want to use a TIL111 opto-isolator in a schematic but couldn't find a part in Eagle for it. The part seems easy enough to make, so I decided to do that.

If you look at the datasheet, page 1, there is a layout with information about the pins in this part. Inside the image of that part there is an infrared emitting diode and a phototransistor.

I was wondering how I can get these in my symbol. I couldn't find any information about that.

If you want to draw it, I think you just use the same line/circle/text drawing tools that you usually use to draw the outline. At least that's what I've always done.

In this case, you might want to just steal one from an existing library; Eagle ships with a bunch of optocouplers with the symbol already drawn. Try the 4N35 in the optocouplers library. There's a good chance it has the same pinout, so you might not need to create a new part.

you could also borrow 2 symbols - led and phototransistor. You aren't limited to a single drawing/
