How would I control connection like I would a switch using a microcontroller? I would like to have to composite video inputs and control which one is used for the output. Seems like there should be an IC for this.

Yes, there are lots of choices. I suggest looking for one with that requires a single power supply voltage, unless your projects already has a negative rail:
