how to create 12 volt / alternate energy schematic

Hi, I want to create a schematic of a liveaboard boat's electrical system. Much of it is 12v dc. There are probably 15 "systems" involved. I'd like to show circuit paths; loads; wire sizes, colors & lengths; navigation equipment; antennas; charging; pumps; monitoring & controls, etc. There is also some 120v AC.
Can you help provide information on programs, tutorials, advice?
