Hi, I have just purchased a Sparkfun Thing ESP8266 and am planning to run it off a 2000mAh lipo battery. Is there anyway I can get values back from the battery to monitor the 'life' left?

You could measure the voltage before the voltage regulator with the analog input, and an appropriate voltage divider, but there is only one on the device which you may wish to use for something else. Also this doesn't say anything about how much energy is left in it.
