this may be a silly question, but why are there 3+ and 3- pads?

So is that to say I am suppose to have 3 power supplies? would anything bad happen if i chose to use one one anode and one cathode? if there is only one power supply I don't see how the number of pads helps it draw current.

The extra pads are to give you flexibility in where you choose to solder your wires. When you add optics and mounting hardware, you can sometimes limit your connection options so having extra pads is nice.
Here is one I have mounted. It's a different star than the one Sparkfun sells but the idea is the same:
