I understand that because of guaranteed delivery, noise can cause sporadic latency (upwards of forever) so none of the manufacturers want to commit to a number. But I can't find a single figure on what to expect for latency to a Bluetooth device.

Any one have any experience?

Your intution is right - it gets very noticable as the link gets noisy.

~10ms on a clear link in my experience.

don't forget to include in the latency figure the time to transmit the entire frame - preamble/management/FEC bits and payload/postamble. This, plus and ARQs (retransmits), plus media access delays can really add up in a non-trivial use-case.
