That Rainbow routine is just a fancy way of blinking a led. And the IR code is also pretty much the Blink sketch. If you want to have the IR code stop the Rainbow code then I suggest you start looking at how the Blink-without-delay sketch is built.

No need to post 2 same/similar questions in the same forum. It confuses the discussion if it is in multiple places. Remove one thread, and post an example of the readout values in the other. I'm guessing you just receive gibberish because you are not properly bit-banging the HX711 pins with the SX15...

Providing specs and a wiring diagram of the panels would probably add to the meaningfullness of the answer.

Be more precise in what worries you about the (over-)scaling in the former. And why a single axis is a bad idea for the latter. Why didn't you provide the error statements in the compilation log (as a result of adding the pressure.begin)? That might explain that there is something missing/wrong in your code. The Arduino's ADC cannot measure voltages as quick as required (microseconds). Few microcontrollers actually can. Iirc ADC clockrate for the Uno/Micro/Nano's is at best 1/26th of the clock rate.
